The oven is electrically heated and includes an air re-circulation fan. The oven has stainless steel internal surfaces which are fully welded to seal the inside of the oven. Humidity can be introduce to the process through steam lances located in the oven ducting, atomised water spray can also be introduced through a spray nozzle in the oven chamber.
